Mediterranean tagliatelle.
A really yummy dish cooked up by my hubby on his day with the girls this week. I whipped in quickly and then headed out to the An Gof celebrations in St Keverne. I can’t believe it was 20 years ago that we walked to Bkackheath in London! Seems crazy when you look back in it.
Rough recipe: a handful of onion and a couple of Clive’s if chipped garlic softened whilst you chopped up a small handful of black olives, grate a carrot, open a can of tomatoes, a squeeze of tomato puree and chop up 3-4 slices of precooked bacon. Add all of this into the pan with a dash of red wine vinegar, 1/2 tsp sugar and some chopped basil. Sunnier off and serve with wholemeal spaghetti.
