This potato reminded me of the unwarranted bad press that the poor old potato gets. We love potatoes in our house. Some of our favourite ways to eat them are boiled, mashed, chopped into stews and moussaka, roasted and wedges. Multi mashes are a particular hit. Simply boil some potatoes and another root veg and then mash together until we’ll mixed (I usually add a little milk and pepper when mashing). Roots that work well include carrot, parsnip, swede and sweet potato. All of these additional roots has the extra advantage of counting towards your 5-a-day.
Try adding some herbs like chives or parsley for a delicious twist.
