You can use pretty much any veg you have to make a yummy soup. It’s a great way of using up odds and ends in the fridge / veg box. I usually supplement it with freezer veg 😍
Today’s ingredients: a couple of handful of frozen onions, a couple of potatoes, 5 carrots, a bunch of spring onions (about to go over!), a tsp frozen garlic, several nuggets of frozen spinach, 500g of pumpkin, homemade chicken stock (no added salt), a bunch of fresh sage and a good shake of mixed herbs – all in the pressure cooker for 15-20 minutes then whizzed it all together.
Then added finely diced ham & peas (cooked in a mug in the microwave).
Served in soup bowls with a drizzle of olive oil, natural yoghurt (me as lower in fat) or creme fraiche (hubby), a squeeze of lemon and a dash of spicy chilli sauce.
You don’t have to worry about chipping the veg more than into chunks which saves loads of time.
As this soup is so packed with veg it’s nice and filling.
