Iron boosting bolognaise 

One hand for the pasta and one hand for the spoon! 

A great iron rich meal packed full of veggies. Tonight’s bolognaise is a mix of beef and pork mince (I’d intended to make meatballs but it seemed like too much faff today!) and LOADS of veggies. We’ve got onions, garlic, peppers, pumpkin, grated carrot, and a roasted Mediterranean veg mix from the freezer, mushrooms and tomatoes (canned, passata & purée). Also loads of herbs, a little low salt stock and some balsamic vinegar. 

There’s enough for 2 more meals so I’m popping one in the freezer for lasagna later in the week and one in the freezer.
