For tonight’s version simply pop the oven in to preheat (about 160’C fan) boil the macaroni and steam the cauliflower over the top.

Whilst that is cooking heat a little oil in a milk pan and then whisk in a couple of tablespoons of plain flour. Once combined gradually add the milk (about 350-400ml) and stir very regularly to ensure it doesn’t go lumpy, until it thickens.

Stir in 1/2 tsp mustard powder, a good grind of pepper & 2-3 tsp mixed herbs.

Once cooked drain the pasta and evenly spread it out in a ovenproof dish. Add the cauliflower and break it up a little so that you can evenly combine it with your macaroni.

Cover with the herby sauce and too it all with a layer of mozzarella or grated cheese.

Tonight I’ve actually cooked it in two pots and added feta into the pot for me & hubby.
