Bringing a bit of the ‘fresh summer’ feeling to lunch on this cold but beautifully sunny January day

Adding grated carrot, sundried tomatoes and blackberry vinegar to this ham salad really gave it a taste boost. The base salad is mixed leaves, rocket, chopped cucumber and cherry tomatoes. Served with some toasted wholemeal Hope’s bread. 

Does anyone have a ‘I’ll use them for something nice’ stash of blackberries? If so let me know and I’ll share my pickled blackberry recipe. I bottled the extra vinegar which has made a delicious dressing. 

I’m doing some study today and so lunch is just for me. When you’re at the books it’s worth having a fresh tasting lunch to perk you up.
