We needed a cosy meal full of flavour this evening as we’re full of colds. This was really easy to prepare and delicious- perfect after a busy week.
Beans tend to be underused, unless they’re coated in sugary and salty tomato sauce 😂
Beans are a really great source of fibre and protein. They’re so fab that they count as both a non-milk protein portion and as a portion of fruit and veg!
This dish is a well balanced combination of starchy carbs, protein and lots of veggies, with the added bonus of being low in fat and salt (these come from the chorizo and the bacon but because it’s not too much it’s a family friendly dish).
Ingredients:
½ tbsp vegetable oil
75g chorizo, chopped
2 slices smoked bacon, chopped
1 medium onion, diced (can use frozen)
2 garlic cloves, chopped (frozen again)
1-2 tbsp mixed herbs or thyme
2 bay leaves
1 tsp paprika
400g can black eye beans
400g can red kidney beans
1 tbsp tomato purée
400g can chopped tomatoes
Spicy chilli sauce (to add when serving the adult plates)
120g rice
Method:
Put the oil, chorizo, bacon, onion and garlic in a hob friendly casserole dish & cook for 5 mins.
Add the herbs and paprika, and mix well.
Add the rest of the ingredients, and pepper to taste, and give it a good stir.
Bring to the boil, then simmer for about 30 mins, stirring, until it’s thick.
Meanwhile cook the rice as per the packet instructions.
Remove the bay leaves before serving with the rice.
