Sweet potato, bean & chorizo hash topped with an egg

This can be made into a vegetarian dish by swapping the chorizo for a teaspoon or two of paprika. 
Ingredients for two adults and two tots:

1 medium onion, diced 

1 clove garlic, fined chopped

Boiled sweet potatoes (1&1/3 fist sized)

Boiled potato (1&1/3 fist sized)

An inch of chorizo 

1/2 can beans (today I’ve used burtolli but you can use any)

6 boiled eggs
Method:

Chop the potatoes and sweet potatoes into bite sized pieces. 

Heat a tsp of oil and fry off the onion & chorizo. 

After a couple of minutes add the garlic.

If you’re boiling the eggs now put them on now as they’ll take about 8-9 minutes depending on size. 

Once the onion is a little translucent add the rest of the ingredients (except the eggs). 

Cook for roughly 5 more minutes until everything is thoroughly earned through. 

Serve topped with the egg(s). One egg each for the wee ones and two each for the adults. 
How does this meal count towards portion control?

This recipe gives everyone 1 serving of starchy carbs, 1 serving of non-milk protein and two servings of vegetables. 
This recipe also works without the onion and garlic but your veg count will drop. It’s also delicious with some avocado added to serve 😍
If cooking this for a baby who’s recently started solids then pick the chorizo off their plate or just cook with a little paprika instead of the chorizo.
