Well it was actually tagliatelle as we’d run out of spaghetti! The girls love wiggly foods like this.
A minimal prep dish courtesy of frozen veggies as we had people coming for tea and I had very little time to spare.
This made enough for 5 adult and 4 baby portions.
1 tbsp vegetable oil
500g good quality #welshback beef mince
2 handfuls frozen diced onion
2 chopped garlic cloves (I used the equivalent frozen)
2 handfuls of frozen chopped peppers
5-6 nuggets of frozen spinach
1 small can (170g) tomato purée
2 tins of chopped tomatoes
A glug of red wine vinegar
3-5 tbsp (depending on how herby you like things!) mixed herbs (I used oregano, basil and parsley)
I often add in a can of beans too eg kidney beans but had run out ifcthese too! Bean are a great source of fibre and protein, they also bulk out a dish making it go further reducing the cost per portion. #winwin
Heat the oil and then brown the mince.
Add in and soften the onions.
Add in all of the other ingredients and bring up to a simmer, stirring regularly.
Pop the lid on and reduce the heat. Allow it to gently cool for 45 minutes stirring occasionally to ensure it doesn’t catch on the bottom. You could pop it in the oven at this point to reduce the need to stir. If you have longer then this dish benefits from a long slow cook.
Boil some water and cook the pasta according to packet instructions.
Serve and enjoy!
Although lots of our meals are finger friendly the girls are the bolognaise from the spoon without a worry. In fact I think it was one of their favourite meals! They are the pasta themselves in between spoonful and this gave us some time to eat too 😋
