Roasted veg tortellini 

Last Friday’s tea after a busy day at Bongo Babies and visiting friends. 

This is a mega quick, minimal prep tea of spinach and ricotta tortellini with cream cheese, mange tout peas and roasted peppers and courgette (plus red pepper pesto for me). 

I boiled the peas with the tortellini for about 5 minutes. Meanwhile I microwaved a bag of frozen chargrilled Mediterranean vegetables (I took the aubergine out as I’m going to use these to make moussaka in the next couple of days). 

A dollop of cream cheese finished off the girls plates and I mixed my cream cheese with a big teaspoon of pesto and stirred this mix into the warm pasta and veg. 

This meal is as quicker to make than most microwave meals take to cook and without the added fat and salt etc.
