Nancy’s cheese tartlets


We’re lucky enough to have been given our friends family recipe for these yummy easy cheese tartlets. 

Ingredients: 

Pastry: (short crust if buying)

4oz self raising flour

4oz plain flour

4oz fat (50:50 no added salt butter:lard is a great mix)

Filling:

2 eggs

1/4 cup cottage cheese 

1/4 cup natural yoghurt

A small handful of grated cheddar 

Method:

Preheat the oven to 180’C fan. 

Mix the pastry, roll out and cut into 12 circles that fit your bun / tartlet tray. 

Mix the egg, yoghurt and cottage cheese together. 

Dollop about a tablespoon of the mixture into each pastry case. 

Sprinkle with the cheddar. 

Cook for 10-15 minutes until they have puffed up and turned golden brown. 

Great eaten warm or cold (fab for packed lunch / picnics)

Suitable for freezing. For best results reheat before eating to freshen them up. 
These are yummy with this basic recipe. However I fancy trying with some spring onions or chives in 😍 in fact there are so many possibilities- maybe tuna – ummm!
