What a treat it was to have this cooked for us. So yummy I have to share it. I particularly liked the eggs in it 💖🐔
6 large potatoes
1 large handful of spinach (you could use a couple of nuggets of frozen spinach)
1 handful of flat leaf parsley (again this is great from frozen too)
1 tsp mustard
1/2 lemon (juice and zest)
1 pot (300ml) creme fraiche
1 handful grated cheese (optional)
1 onion, diced (could use pre hopped from the freezer for speed)
1 salmon filet, chopped into chunks
1 small smoked haddock filet, chopped into chunks
1 small cod filet, chopped into chunks
Preheat the oven to 180’C.
Chop and boil the potatoes in unshared water.
Add the eggs for 5 minutes. Then remove and cool the eggs.
Meanwhile dice the onions and carrots. Gently soften over a medium heat until the onion is lightly browned. Add the creme fraiche, cheese, mustard, lemon juice, zest and parsley.
Mix the fish and spinach (defrost in the microwave if using frozen) together in a ovenproof dish.
Cut the eggs into quarters and add to the dish.
Cover the contents of the dish with the creamy sauce.
Drain and mash the potatoes, then spread them over the top of the fish mix. Use a fork to make the top of the mash bumpy so that you get lots of crispy bits (I love these!).
Cook for about 35 minutes.
Enjoy with some greens like broccoli, cabbage (I finely cut it for the girls and they get on well with it), and / or peas.
Top tip: To make lower in fat omit the cheese and replace the creme fraiche with low fat cream cheese or blended cottage cheese.
What an amazing world we live in. We met Miranda and her wonderful family almost half way round the world but we felt like we’d known them for ages. Some people are just so easy to get on with 😀 Her little one gave the girls the confidence to go through a tunnel at the park. This might sound like something very small but even my explorer wasn’t keen at first. Now only a few weeks later they are off exploring together. They seem to give each other confidence. One has a go and the other sees that she was ok so follows and almost eggs on the leader!
