Ingredients

Thinly rolled short crust pastry (4 oz plain flour, 1 oz unsalted butter & 1 oz lard)

A couple of slices of smoked salmon

1/4 romanesco (can use broccoli or asparagus instead) cut into small pieces and steamed until aldente

5-6 eggs

A small glug of milk

Handful chopped parsley

1 tsp mustard powder

Handful of grated strong cheddar

Method

Preheat the oven at 180โ€™C fan.

Roll out the pastry and use it to line a pie dish. Sprinkle 1/3 of the grated cheese onto the base. Pop into the oven for 10-15 mins

Meanwhile chop up the romanesco and pop into steam (I did mine in the microwave).

Chop up the parsley & smoked salmon & grate the cheese.

Beat the milk into the eggs and add the parsley, mustard powder and a pinch of pepper.

Evenly spread the romanesco & salmon in the pie dish. Top with the egg mix and sprinkle on the cheese.

Cook in the oven for about 45 minutes until golden.

I love using more unusual fruits and veggies. Romanesco is cross between broccoli and cauliflower with a funky look and delicious taste Iโ€™d highly recommend it ๐Ÿ˜
