Chicken fillet oven cooked in fresh breadcrumbs with a little oil eg rapeseed (in the UK most of the vegetable oil is rapeseed) or olive oil and new potato wedges, with broccoli and carrots.
Portion pictured is for a 2 year old.
Method:
Preheat oven to 190’C.
Chop the potatoes into wedges and part boil for 5 minutes.
Put a little oil onto a baking tray and into the oven to heat up.
Mix a little oil with the breadcrumbs. You could also add some herbs or paprika if you like.
Cut chicken into chunky strips & roll in the breadcrumb mix.
Lay out the chicken and the potatoes on the preheated baking tray. Turn the wedges once before putting into the oven.
Oven bake for 30-35 minutes turning occasionally.
Meanwhile boil the carrots and steam the broccoli on top.
Top tip: you could substitute the chicken for a white fish like pollock, use sweet potato for the wedges and use different veggies and you’d have another recipe for your collection! I’d add a squeeze of lemon or lime to this.
