This is our roasted chicken and squash risotto. We roasted double the veggies (squash, sweet potato, carrot, parsnip, garlic and onion) earlier in the week and are enjoying the benefits! 

We made a low salt stock from the chicken carcass in the pressure cooker so this is a really family friendly meal suitable from the start of weaning (once you’ve tried the individual foods). 

Chopped it all up and cooked with some risotto rice – yummy! 

A risotto is always a big hit in our house. B now prefers to eat it with her spoon (some help with spoon loading) but W stills gets stuck in with her hands and likes us to help her with the spoon. It can be quite messy but totally worth it.
